Details  Distilled a year after the distillery was bought out by Andrew Symington, this version, which has reached maturity, is absolutely magnificent in power, concentration and smoothness. Restoring a hundredfold the fruity, floral and malty character inherent in Edradour, it above all highlights a profusion of spices, each more noble than the next, as well as surprisingly intense and remarkably integrated animal sequences.

Tasting notes

Nose: ample, powerful. Musky, chocolatey, spicy (black pepper, cloves), fruity (candied orange, date) and malty at the same time, the first nose is impressive with fullness and concentration. When aired, notes of bacon underline the animal character of the aromatic palette. This then becomes deliciously honeyed (heather, lime), differently fruity (rhubarb, apricot, wild strawberry) and finely caramelized. Scents of pine resin, iris and green tomato fritters poetically conclude the first stage of the tasting.

Palate: rich, concentrated. Remarkably balanced, the attack on the palate is marked by notes of marmalade, quince jelly and apricot jam with great finesse of expression. Covered with a thin layer of salted butter caramel, the mid-palate is also nobly spicy (saffron, ylang-ylang, cardamom). In the aftertaste, malted barley grains and vanilla pods coat the taste buds with smoothness and roughness.

Overall: long, assertive. Closely linked to the palate, the start of the finish is both fruity (candied apricot, fresh walnut), heady (iris, carnation, petunia) and powdery (cocoa, cinnamon, ginger). The very end of the palate is refreshed by a delicious vanilla ice cream. With a lot of volume, the retro-olfaction reveals flavors of beeswax, nutmeg and guava that are crying out for the truth. The empty glass is intensely malty, herbaceous (tobacco) honeyed (lime blossom) and chocolatey.
