Distilled during the summer of 2010, this whisky from Daftmill distillery is the latest expression made from Optic barley. Although grown on their own land since the 1980s, this variety has gradually been set aside in favor of more indigenous barley. Once harvested, the barley is malted, dried, and then transformed into “grist” before being distilled and aged in oak casks on-site, meaning in the farm’s own warehouse. This is a blend of 25 first-fill casks that previously held bourbon. Only 6,250 bottles worldwide. |
