Cabernet Sauvignon is one of the world’s most noble grape varieties. The Yellow Tail is made with these grapes sourced from the highest quality vineyards. The process of winemaking pretty long where the grapes are crushed and the stem is removed and then they are kept for fermentation on skins in contact with oak. The temperature controls the fermentation which allows maximum varietal flavour, colour and tannin extraction. These are then bottled at the winery in Yenda, New South Wales. The alcohol content is about 13.5%. Flavour – The flavour of this wine is bright red in colour with a fragrant and delicate nose. Crammed with rich blackberry and sour cherry flavours, the wine is mid-weight and gives a soft and a juicy finish. Facts about the grape – Cabernet Sauvignon. This grape is well known for its elegance. It is very soft driven in style with feathery tannins. It is deeply coloured, supple textured variety with a prominent but elegant tannin profile. The flavour of this fruit is a concentrated mix of berries, mulberry, green herbs and a hint of pepper.
